Katie Button has worked in restaurants all over the world — New York City, Los Angeles; Paris; Roses, Spain; Washington D.C. — but she chose Asheville for her first restaurant, Cúrate, a Spanish tapas bar.

“Asheville is a city where people move to make their dreams come true, to do what they love and are passionate about,” she says. “I think that is palpable in the city, in the restaurants. It’s this thing nobody can quite put their finger on.”

Button’s dreams have materialized in the form of two world-class restaurants, which she owns with her family. At her newest, Buttons & Co. Bagels, she serves bagels made on site using a house-made sourdough starter and blend of local flours from Asheville grain miller, Carolina Ground

While Asheville is proud to have Button, she would have risen to the top of her profession in any city. During her travels, she worked for José Andrés, Ferran Adrià and Johnny Iuzzini, some of the world’s top chefs. Since Cúrate opened in 2011, she’s been nominated for the James Beard Award four times.

She credits her success to ingredients, many of which come from local farms. The restaurant even partnered with a nearby pepper grower to produce piquillo peppers, which are typically grown in Spain. “My food philosophy is about the ingredients first,” she says. “I’m always looking for the best products. From there, I tend to treat them pretty simply because if you start with a great product it doesn’t need a whole lot more.”

The Power of Quinoa

The grain, pronounced “keen-wah,” is packed with a surprisingly high amount of nutrients and can make a perfect addition to almost everyone’s plate, even those who follow restricted diets.

A high protein grain alternative. A 2009 study at the University of Chile found that 15 percent of the total content of quinoa is protein, more than double the amount found in most standard grains. The study also revealed that quinoa has a complete amino acid profile, meaning that with each serving, you’re giving your body all of the nine key building blocks for making protein.

A weapon in the fight against diabetes and hypertension.In 2009, the Universidade de São Paulo in Brazil released the findings of a study that showed quinoa’s abilities to lower blood glucose levels in individuals with diabetes. What’s more, the study found that consuming the seed on a regular basis helped to lower blood pressure levels in those with hypertension. The scientists credited the presence of quercetin derivatives in the grain for its positive effects on blood glucose and the cardiovascular system.

  • Washing with soap and water is much more effective than washing with water alone. Soap binds to the dirt, oils, and microbes present on hands and makes it easier to wash them away.  Applying soap also tends to make people scrub more thoroughly.
  • Friction from lathering and scrubbing hands physically helps the soap bind to and loosen dirt, oils, and germs.
  • Although the optimal length of time for handwashing may depend on factors such as the type and amount of soil, grease, and germs on hands, studies have shown that scrubbing for at least 15 seconds removes significantly more germs from hands than washing for shorter periods.

WHAT’S COOKING TODAY?

Cheese Souffle

For the Dish; Whole butter at room temp. 1 tbsp. AP Flour ¼ cup Souffle mix; Butter at room temp 3 oz AP Flour 3.75 oz Whole milk- warm 18 oz Egg yolk 5 oz Gruyere cheese – grated 8 oz Ham - small diced 8 oz. Salt ½ tsp White pepper ¼ tsp. Egg white- at room temp. 10 oz

Method

1- Butter and flour a 2 qt soufflé dish and remove excess flour. Pre heat Oven at 400F. 2- Make a roux with butter and flour; add the milk slowly and Wisk till mix is very smooth; continue whisking over med hi heat and cook till it comes to a boil and the mix get very thick. 3- Remove from heat and let cool a bit. Whisk in the yolks one at the time till fully incorporated. 4- Using a wooden spoon, mix in the cheese and ham; add salt and pepper. Transfer to a medium mixing bowl. Whip the egg whites in a separate, very clean, bowl, to a soft pick. 5- Using a rubber spatula, fold ¼ of the egg whites into the soufflé mix till combine; fold gently half of remaining whites. Add the rest in the same manner, being careful to keep the airiness and lightness of the mix. 6- Spoon the soufflé mix into the prep soufflé dish and bake 40 minutes or until it raises and golden brown. 7- Serve immediately. Participative Theories of Leadership

Participative Theories of Leadership are considered by some to be an ideal style of leadership because they consider input from others. Leaders utilizing this type of theory tend to encourage both contributions and active participation from other group members. In turn, this allows the other group members to feel more relevant and committed to the direction the leader has chosen to go. The only real caveat here is that the leader maintains the right of what input to allow from the other group members.

It has been my observation, over the years, that many leaders rank low on empathy. They understand it intellectually, they just don’t pay enough attention, ask the right questions or comprehend that it is not just about what your colleagues think, but about how they feel. To be an effective leader you need to do more than just manage the bottom line and watch the numbers like a hawk. Obviously that may be necessary, but so is offering suggestions, being supportive, being a source of creative ideas, helping your people think through their roles and helping them make the best use of their time. In fact, that is precisely what the best leaders do.

8 Tips For Avoiding Gluten Cross Contamination – PrimoHealthCoach

▪ Oils that have been used to deep fry battered foods will contaminate foods like French fries. Use separate oils, and ask the chef when dining out if the same oil is used for battered foods.

▪ Cutlery, utensils and potsand pans must be thoroughly cleaned before cooking gluten-free to avoid cross-contamination.

▪ Toasters and ovens that have been used for glutenous breads can contaminate gluten-free breads. At home try to keep two separate toasters.

▪ Grills and barbecues can easily cross-contaminate foods if not properly cleaned. Many sauces used to barbecue have gluten.

▪ Sifters used for both glutenous and gluten-free flours will cross-contaminate. At home if you use both types of flour, keep separate properly labeled sifters.

▪ Your mayonnaise, peanut butter jar, jams and jellies are easily contaminated when making sandwiches.

▪ Glutenous flours have a tendency to stay airborne for some time after use. Cooking in a kitchen shortly after preparing foods with glutenous flours is risky for the sensitive person. Because of this I find it very hard to believe that you can get a truly gluten-free pizza from a pizza restaurant that makes regular pizza as well.

▪ Any foods not prepared in a gluten-free facility, including your own home, runs the risk of getting cross-contaminated.
