Misti Norris, chef and owner of Petra and the Beast, in Dallas, is one of Food & Wine’s ten best new chefs in America. The prestigious annual list, released Tuesday, is yet another honor for Norris, whose restaurant landed at number seven on Texas Monthly’s round-up of the best new restaurants in Texas for 2019, published in March.

In lauding Norris’s culinary ethos, Food & Wine waxed poetic, applauding her for “digging into her ancestral archives to perfect her Cajun charcuterie, and then—why not?—choosing to throw wildflowers into the curing liquid, like Ophelia with a meat grinder.” In our write-up, we cited her hallmark techniques of foraging, fermenting, and whole-animal cookery and described the humble, idiosyncratic East Dallas space where she practices her craft, a small dining room adorned with bundles of dried herbs and baskets of bleached bones.

Norris has also been nominated for best chef in Dallas in the Culture Map’s 2019 Tastemaker Awards.

The Power of tomatoes

Lycopene is a carotenoid that is present in tomatoes, processed tomato products and other fruits. It is one of the most potent antioxidants among dietary carotenoids. Dietary intake of tomatoes and tomato products containing lycopene has been shown to be associated with a decreased risk of chronic diseases, such as cancer and cardiovascular disease. Serum and tissue lycopene levels have been found to be inversely related to the incidence of several types of cancer, including breast cancer and prostate cancer. Although the antioxidant properties of lycopene are thought to be primarily responsible for its beneficial effects, evidence is accumulating to suggest that other mechanisms may also be involved. In this article, we outline the possible mechanisms of action of lycopene and review the current understanding of its role in human health and disease prevention.

CDC Sodium Reduction Initiative

The 2015-2020 Dietary Guidelines recommend that Americans limit their sodium intake to no more than 2,300 mg a day, and no more than 1,500 mg a day for those suffering from hypertension. This is not an easy task to achieve considering our busy schedules, our consumption of processed foods and regularly dining out. According to the CDC,  good tips for sodium reduction usually include cooking at home from scratch and replacing salt by herbs and salt –free spices, as well as using garlic, and citrus juices in the cooking process.  When at the grocery store, try to buy “low sodium” versions of packaged foods and read labels, choosing foods with no more than 600 mg of sodium per meal.  Avoid cured, smoked and other processed meats. Salmon Filet Coulibiac

For the Pate Brioche Dough: Bread flour 26.75oz. Whole milk 2.5 fl oz. Whole eggs 15 oz. Instant yeast .25 oz Salt .5 oz Unsalted butter 15 oz. Process, final dough Mix dough thorough, temperature should be at 72F to 77F, First fermentation, 1 hour; refrigerate 12 to 15 hours. Pre-shape to a light ball, resting time 20 to 30 minutes. Final proof 1 to 1.5 hours at 78F, steam for 2 seconds, Bake in a confection oven at 385F.

Method

For the final dish Salmon filet 1 lb. Roasted buckwheat 3 oz. Dry weight Hard boil eggs 4 ea. Mushrooms chopped 8 oz Pâte a brioche 12 oz Boil the buckwheat in the broth and let cool. Chop and sauté the mushrooms, let cool and set aside. Roll out the dough to 3/8 inch; lay some buckwheat on the center of the dough; eggs cut into half and mushrooms. Sear the salmon on both sides and lay on top. Cover the other side with mushrooms, eggs and buckwheat to finish. Close the fish with dough. Turn over the Coulibiac on a sheet pan; brush with egg wash; bake in the oven 45 to 50 minutes. Serve with clarified butter. Participative Theories of Leadership

Participative Theories of Leadership are considered by some to be an ideal style of leadership because they consider input from others. Leaders utilizing this type of theory tend to encourage both contributions and active participation from other group members. In turn, this allows the other group members to feel more relevant and committed to the direction the leader has chosen to go. The only real caveat here is that the leader maintains the right of what input to allow from the other group members.

It has been my observation, over the years, that many leaders rank low on empathy. They understand it intellectually, they just don’t pay enough attention, ask the right questions or comprehend that it is not just about what your colleagues think, but about how they feel. To be an effective leader you need to do more than just manage the bottom line and watch the numbers like a hawk. Obviously that may be necessary, but so is offering suggestions, being supportive, being a source of creative ideas, helping your people think through their roles and helping them make the best use of their time. In fact, that is precisely what the best leaders do.

8 Tips For Avoiding Gluten Cross Contamination – PrimoHealthCoach

▪ Oils that have been used to deep fry battered foods will contaminate foods like French fries. Use separate oils, and ask the chef when dining out if the same oil is used for battered foods.

▪ Cutlery, utensils and potsand pans must be thoroughly cleaned before cooking gluten-free to avoid cross-contamination.

▪ Toasters and ovens that have been used for glutenous breads can contaminate gluten-free breads. At home try to keep two separate toasters.

▪ Grills and barbecues can easily cross-contaminate foods if not properly cleaned. Many sauces used to barbecue have gluten.

▪ Sifters used for both glutenous and gluten-free flours will cross-contaminate. At home if you use both types of flour, keep separate properly labeled sifters.

▪ Your mayonnaise, peanut butter jar, jams and jellies are easily contaminated when making sandwiches.

▪ Glutenous flours have a tendency to stay airborne for some time after use. Cooking in a kitchen shortly after preparing foods with glutenous flours is risky for the sensitive person. Because of this I find it very hard to believe that you can get a truly gluten-free pizza from a pizza restaurant that makes regular pizza as well.

▪ Any foods not prepared in a gluten-free facility, including your own home, runs the risk of getting cross-contaminated.
